easy colorful fajitas

Posted by on Oct 13, 2012 | 4 comments

I broke my veggie mandolin slicer about a year ago and my cooking has not been the same. I used to slice up anything and everything really quickly and with ease. I do not have serious knife skills.. or even very basic ones for that matter so no mandolin made me extra lazy in the kitchen. In comes Fresh and Easy. I feel like their infomercial now. I really couldn’t stand them when they first opened here because my first experience there I was confused and they didn’t have epsom...

‘sausage’ and peppers

Posted by on Oct 8, 2012 | 1 comment

This meal cooks in less than five minutes and is deeeelicious! Really, this is my excuse to eat a heap of sauerkraut and I do so with glee. Despite being absolutely tasty it comes packed with protein, vitamins from the peppers, expectorant powers of onion, and all of nutrients of cabbage plus the fermenty, digestion boosting, healthiness that sauerkraut is naturally equipped with. Sauerkraut is a power-food renowned across the world, even its juice is used medicinally in Chinese Medicine. Read...

Pizza People Mobile Food Truck, Phoenix, Arizona 85014(480) 326-8542 How do I love Pizza People? Let me count the ways! Vegan cheese on request! They use Daiya – my favorite – which is soy free and gluten free. Gluten-free crust on request! Popeye Pizza (fresh basil, spinach, and grape tomatoes) Fun Guy Pizza (mushrooms and truffle oil)  Truly exceptional glutenous crust, while the GF is tasty and I am grateful they carry it, their regular crust is just SO GOOD. Deliciously simple...

comfort food

There is nothing clever or unique about this suggested meal. It is the EASIEST thing and what James and I seem to crave the most. You get everything you need, veggies, protein, grains. It takes minutes to prepare and it is comfort on a plate. That said, there is nothing to scoff at here. Simplicity and convenience is nothing to look down your nose at. Who doesn’t work hard all day and want something easy and tasty at the end of the day, right? So! I give you my favorite comfort meal....

vegan stuff I love: Nami

Nami 2014 N. 7th Street, Phoenix, AZ. 602 258-NAMI (6264) Nami is my go-to place for vegan ice cream! My favorite fluctuates between strawberry-banana and peanut butter, pretzel, banana. Mmmm. They have a zillion delicious flavors though. It is like a vegan Dairy Queen – choose your toppings and they mix it up with vegan soft serve, or tsoft tserve as they like to call  it. I might also note that they are so ingrained in my psyche that when I am teaching my geology classes I have to...

Tracy Talk Thai Curry

Posted by on Oct 4, 2012 | 2 comments

We are fortunate to live near many delicious Thai restaurants. I love Thai-E-San, Thai Rama, and Thai Basil but sometimes it is more cost effective and relaxing to stay home and have a home cooked curry. There is something magical about the combination of flavors. Spicy, sweet, savory – coconut with peanut, come on! So good! I especially love making curry when James or I are coming down with something as the herbs and spices used are wonderful expectorants and help the body work its way...

hearty camp stew

I was fortunate enough to go to the Traditions in Western Herbalism Conference at Mormon Lake, AZ recently. I was equipped with my propane camp stove and camp kitchenware and a cooler full of goodies. It was a busy conference with classes scheduled morning to night so I didn’t have much time to cook, though it is one of my favorite activities while camping typically. This time I needed something fairly speedy so I went the most convenient route I could and used some prepackaged goodies...

Vegan Month of Food – Happy Veggie Awareness Month!

Posted by on Oct 1, 2012 | 0 comments

Veggie Awareness Month Vegan Month of Food (MOFO) This is now year 17 as a veghead. I became vegetarian in 1995 as a young teen and became vegan in 2001 as I learned more and more about the horrible suffering of animals in captivity, even when they were not being killed to be eaten.  I am an animal lover, of course! My company, Strawberry Hedgehog Bath & Body, is proudly 100% vegan, but I am a food lover, too. I have been slacking on cooking lately.  A lot of my customers actually found me...

fresh ginger-coconut sweet potato mash

Posted by on Nov 12, 2010 | 1 comment

Another tempting day to eat out with dwindling groceries but too much to do to leave the house again so lucky for me we picked up a sweet potato at the store whenever it was we last shopped. :c) I always keep a can of full fat coconut milk on hand in case I want to make ice cream and I had a shred of ginger left from my chai and chana. What a rich and nutritious combo!!! This is the easiest thing on the planet and feels totally decadent. This is my lunch but would be a fantastic side dish at...

pumpkin-potato chana masala

I almost ate out again yesterday, it didn’t seem like we had any groceries but we did have a couple taters, a small head of broccoli, garlic, ginger, onion, a carrot on its way out and lots of canned stuff.  I had bee drinking tea all day so I was in the mood for Indian so I busted out some spices, got the garlic, ginger, and onion sauteing and this beauty came together nicely. Just enough spice and great flavor. This would be great with a little plain soygurt or sour supreme on top and...

warm and spicy, oh so nicey chai

Posted by on Nov 10, 2010 | 1 comment

I looooove me some chai. I hadn’t had it in ages until last Friday at a wonderful Woman’s Rite of Passage Workshop at my favorite yoga studio, Inside the Bungalow, one of the amazing instructors, Ingrid, brought a thermos of delicious homemade chai to share. The theme of the workshop was gratitude and it paired perfectly with the warm, comforting chai and now I am craving it!  I love inhaling its sweet aroma, I love the warm feeling of the ginger and pepper, I even love cooking...
