Awesome Veg-Grocer-to-be needs your help!
From my buddy, Rikki, who has been working very hard on this worthwhile project:
I have been working on this project with a friend of mine Heather, to get an all plant-based grocery store open in Phoenix. I know for some of you not living in the valley or even miles and miles away this may not seem that important or even interesting, but what this can be is a foundation for future markets to open and model themselves after VegCo Market <---that is what we are calling it. It is an all plant-based (this means no meat, no dairy, no eggs, no seafood) grocery store that is focused on ethics and sustainability. Everything sold in VegCo will be as local as possible, as environmentally friendly as possible, no GMOs, no pesticides/herbicides on the food. There will be little to no packaging, we will have bulk bins for for items (except those that absolutely must be packaged or refrigerated) our mission is to be as bag-less as possible (bring your own), we will provide re-usable containers for the the bulk items. There will be an in house bakery and deli to get your food on the go, we will support local vendors and restaurants that would like us to sell their products. There will be classrooms to educate on gardening and composting, teaching about food and health and there will be a demonstration kitchen to teach customers how to create fabulous, environmentally friendly foods at home. So please take a minute, like us on Facebook, check us our on Tumblr, Twitter and Pinterest and please if you have a few dollars to spare check out our indiegogo page and make VegCo a reality.

easy colorful fajitas
easy colorful fajitas
I broke my veggie mandolin slicer about a year ago and my cooking has not been the same. I used to slice up anything and everything really quickly and with ease. I do not have serious knife skills.. or even very basic ones for that matter so no mandolin made me extra lazy in the kitchen. In comes Fresh and Easy. I feel like their infomercial now. I really couldn't stand them when they first opened here because my first experience there I was confused and they didn't have epsom salts. :c) All of my friends kept raving about them and I fell in love with their hummus at a pot luck.. it doesn't hurt that they are our closest grocery store either. So! They have pre-sliced all sorts of veggies and fruit. I had to work late last week and so did my husband. He was on his way home and so was I, I stopped by Fresh and Easy, grabbed these ingredients and dinner was done by the time he got home. Because some nights I only have ten minutes to make dinner... easy fajitas!

easy colorful fajitas
1 package gardein "chicken" strips
1 red onion, sliced
1/2 each, anaheim, red, yellow, green bell peppers, sliced
pinch of garlic powder
drop of liquid smoke
quarter red cabbage, shredded
1 can pinto beans, drained and rinsed
Salt and pepper to taste
Salsa and sour supreme to taste
Corn tortillas
Heat a tablespoon of olive oil on medium-high heat, add in the onions and peppers. Allow to saute for a minute before adding in the gardein strips, liquid smoke, and garlic powder. In small sauce pan heat the beans with just a tablespoon of water, add salt and pepper to your liking, I think they taste more authentic just plain but sometimes I will sautee a clove of garlic first and then add the beans - whoooooa mama, good stuff. When the onions start to get transparent and the gardein is heated through you are done cooking! Warm your tortillas - an easy trick is to take a couple of tortillas and put them over your beans with a lid on top to steam them. Top your fajita veggies with a handful of your shredded cabbage. Top your beans with a bit of salsa and sour supreme and you are ready to have a delicious and nutritious super speedy meal!

‘sausage’ and peppers
‘sausage’ and peppers
This meal cooks in less than five minutes and is deeeelicious! Really, this is my excuse to eat a heap of sauerkraut and I do so with glee. Despite being absolutely tasty it comes packed with protein, vitamins from the peppers, expectorant powers of onion, and all of nutrients of cabbage plus the fermenty, digestion boosting, healthiness that sauerkraut is naturally equipped with. Sauerkraut is a power-food renowned across the world, even its juice is used medicinally in Chinese Medicine. Read more about how awesome sauerkraut is here or here.
Having GREAT sauerkraut makes all the difference. For years I have loved Bubbies until I found a local maker whose is just as great, Ray'z Not Yet World Famous Sauerkraut by Urban Survival AZ (follow them on facebook if you are in AZ to see what markets they will be at so you can get your hands on this lovely creation). If you are interested in trying it yourself here are a couple of recipes: traditional vs. no-pound technique. Your mustard quality really counts here, too. Be sure you get a good whole-grain mustard. I like the Fresh and Easy brand but just please please please don't use American yellow mustard, totally not the same. Bonus - whole-grain mustard contains selenium, a rare mineral necessary for thyroid health!
'sausage' and peppers (serves 2!)
- 1 Tofurky Kielbasa link, cut in 1/2 inch slices
- 1/2 each, red, yellow, and green bell peppers sliced
- 1/2 yellow onion, sliced
- 1 Tbsp GOOD grain mustard
- 2 cups GREAT sauerkraut
- 1/2 Tbsp olive oil
Warm olive oil to medium heat, saute peppers and onions until they start to soften. Add in the kielbasa slices and mustard, stirring until mustard is distributed and cooking until everything starts to brown. Plate up one cup of your favorite sauerkraut per plate and top with half of your sausage and peppers each.

vegan stuff I love: Pizza People
Mobile Food Truck, Phoenix, Arizona 85014(480) 326-8542
How do I love Pizza People? Let me count the ways!
- Vegan cheese on request! They use Daiya - my favorite - which is soy free and gluten free.
- Gluten-free crust on request!
- Popeye Pizza (fresh basil, spinach, and grape tomatoes)
- Fun Guy Pizza (mushrooms and truffle oil)
- Truly exceptional glutenous crust, while the GF is tasty and I am grateful they carry it, their regular crust is just SO GOOD.
- Deliciously simple sauce. I believe it is just crushed tomatoes and garlic.. how do they do it??
- They are like family! Oh wait... they ARE family! :c)
Pizza People is a spectacular food truck run by MaryBeth and Tim Scanlon. MaryBeth is my cousin inlaw, she is James' cousin. I adore Tim and MaryBeth, they make the best pizza and are super accommodating for all sorts of restricted diets. I really don't believe I am biased by being family, Pizza People is good people, really. Beyond my favorite pizza in town just based on being tasty, they are some of my favorite people and I admire how they treat their customers and run their business. Click here to follow them on facebook and see where they are at. They are usually at Food Truck Fridays at the Downtown Phoenix Public Market and they are starting at a new spot, 803 N 7th St (7th St/McKinley-just N of Roosevelt on east side street) Red Bricks Building Tues/Wed/Thurs 11-1:30. comfort food
There is nothing clever or unique about this suggested meal. It is the EASIEST thing and what James and I seem to crave the most. You get everything you need, veggies, protein, grains. It takes minutes to prepare and it is comfort on a plate. That said, there is nothing to scoff at here. Simplicity and convenience is nothing to look down your nose at. Who doesn't work hard all day and want something easy and tasty at the end of the day, right? So! I give you my favorite comfort meal. What is yours?
sketti comfort food
- 1 package rice spaghetti (the rice pasta from Fresh & Easy is ridiculously good)
- 1 jar of your favorite spaghetti sauce
- 1 package of Gardein crumbles
- 1 head broccoli
- 1/2 cup nutritional yeast
- 1/2 cup raw almonds, ground
- handful of fresh basil

Nami is my go-to place for vegan ice cream! My favorite fluctuates between strawberry-banana and peanut butter, pretzel, banana. Mmmm. They have a zillion delicious flavors though. It is like a vegan Dairy Queen - choose your toppings and they mix it up with vegan soft serve, or tsoft tserve as they like to call it. I might also note that they are so ingrained in my psyche that when I am teaching my geology classes I have to fight to not say tsoynami instead of tsUnami! *shakes head* Their Sunday brunch is quite delicious and they always have a variety of lovely vegan pastries. If you have not tried them yet, go there now! :c)
