comfort food

There is nothing clever or unique about this suggested meal. It is the EASIEST thing and what James and I seem to crave the most. You get everything you need, veggies, protein, grains. It takes minutes to prepare and it is comfort on a plate. That said, there is nothing to scoff at here. Simplicity and convenience is nothing to look down your nose at. Who doesn’t work hard all day and want something easy and tasty at the end of the day, right? So! I give you my favorite comfort meal. What is yours?

sketti comfort food

  • 1 package rice spaghetti (the rice pasta from Fresh & Easy is ridiculously good)
  • 1 jar of your favorite spaghetti sauce
  • 1 package of Gardein crumbles
  • 1 head broccoli
  • 1/2 cup nutritional yeast
  • 1/2 cup raw almonds, ground
  • handful of fresh basil
Bring a big pot of salted water to a boil and add your rice pasta, cooking as directed (do not stray from the directions, it is easy to over or under cook the rice pasta so just don’t walk away). Blend the almonds and nutritional yeast in a food processor (I use my magic bullet, a clean coffee grinder would work, or a blender). Warm your sauce in a sauce pan adding in your crumbles, and almond-nutritional yeast combo. You may wish to reserve a couple of Tbsp of the blended nutritional yeast and almonds to use like parmesean to top your meal.
The last minute of boiling toss your chopped broccoli in with the pasta to flash boil them. Fish the broccoli out with a slotted spoon and put on your plates with Earth Balance and salt and pepper. Strain your rice pasta and run a bit of cold water over the colander to stop the cooking process. Put back in your pot and toss gently with olive oil and your fresh basil, plate it up, smother with sauce and serve it as is or with a warm crusty roll. Ahhhh comfort.
