Today was the 4th Coffee, Cookies, and Crafts event. It was a lot of fun. I especially love the community building around it, they have attracted a fabulous group of dedicated and talented crafty-folk I look forward to seeing at each event! I brought some cookies as part of the deal is there are free cookies and free coffee for customers and crafters to have throughout the day. I started to make oatmeal-chocolate chip cookies this morning and I was out of chocolate chips!
Hard to believe but I love the texture of the oatmeal cookie so I decided to go with what I had – some lemon juice and some shredded coconut! Even better and more summery! They were SO very good and easy to make. My only mistake? I didn’t take a good picture of them!! I just have the one of them wrapped up but oh well. :c) I hope you make these and let me know what you think of them.
coconut-lemon oatmeal cookies
makes lots of cookies! 3 dozen +
1 cup Earth Balance margarine
1 1/2 cups vegan sugar
1/4 cup water
1/4 cup lemon juice
1 1/2 tsp vanilla extract
1 1/2 tsp coconut extract
5 drops pure lemon essential oil or zest of one lemon
1 cup whole wheat pastry flour
1 cup unbleached all purpose flour
1 1/2 tsp baking powder
1 cup wheat germ
1 1/2 cup quick oats
1/2 cup shredded unsweetened coconut
1/2 cup chopped walnuts
Preheat oven to 375, cream Earth Balance and sugar until fluffy. Add water, lemon juice, extracts, essential oil and beat well. Stir together flour, powder, and wheat germ and then stir into wet ingredients. Stir in oats. Stir in chopped walnuts and coconut.
Place heating tablespoons of bater onto parchment papered cookie sheets and flatten a bit. Bake for 10-12 minutes. Let cool and just try to not eat them all!
